We're a married couple who met working abroad on a cruise ship and decided to bet on ourselves, making sushi with a side of playful joy.
Emma Grimaldi
Co-FounderEmma brings a scientific rigour to Sushi Pops, with a background in microbiology and customer service. She leads on safety, recipe development and accessibility — ensuring guests with dietary requirements are genuinely accommodated and everyone feels welcome.
Ignacio Grimaldi
Co-FounderNacho built his career across leading hospitality venues including Sushi Samba, The Dorchester and St Pancras Renaissance, where he became known for his creative and immersive cocktail menus. He spotted the push-pop sushi gap and turned it into one of London's fastest-growing food brands.
Nora Grimaldi
Head of Marketing and Quality ControlNora oversees morale, floor patrols and rigorous taste-testing of anything dropped by the counter. A chow chow of refined standards, she brings fluffiness, tail jiggles, and approves all belly rubs. Brand mascot, official greeter, very good girl. Ask for Nora at the counter for a side of cuddles with your sushi.
